Biryani, the quintessential Mughlai muse, added to it melt-in-the-mouth kebabs on the platter for ecstasy unlimited.
Hotel Noor -Us -Sabha Palace is hosting a food festival that puts the best biryani and kebabs from across the country on one table. The 3 day lip smacking affair, which started on Thursday , will serve different varieties of biryanis, Kebabs, Salads, Raitas, Chutney, Main Course and Indian breads along with desserts.
I started off with a platter of starters that catered to both the vegetarian and non-vegetarian taste buds. Through its course, Chef Suman & Chef Mumtaz walked us through an array of dishes on the menu they had to offer, explaining their history and significance, each unique and rich. Tandoori Kumbh and Paneer Malai Tikka served were both delicately flavoured with smoky tandoori flavour, that’s typical of the Nawabi cuisine, a delight to someone like me who loves tandoori food and its grilled textures.
Biryani
The highlight of the food festival is the variety of biryanis. Chef Mumtaz coming from ITC Gardenia, Bengaluru, brings with him his signature Dum Phukt Biryani and a lot more.
Paan ki Biryani
My personal favourite from the entire menu was “Paan ki Biryani.” Highly creative and a heavenly delight for all the biryani lovers. The Paan Patta’s flavour infused in this biryani was something out of the world. Medium spicy along with rich textures of Paan makes it a must try for all the food lovers!!
Kofti Biryani
The main element of this biryani was the Koftas which was served with either meat or vegetable on request. This biryani was spicy and the koftas along with Biryani blended well with each other, making it one of the most ambrosial Biryani.
Dum Pukht Biryani
One need not travel places in search of ITC’s Signature Biryani. It’s right here in town. Food lovers can relish this Biryani during the food festival. The secret ingredients of making this biryani are yet not revealed. The spices & rich aromatic flavours make it heavenly.
Next came along a basket of some delicately fragrant Sheermal Roti which was unique with light toned sweetness from saffron and cream. One can try them with Paneer Shan -e – Nawabi, Bhopali subz rizala, Shaan e gosht or Murg Hussaini which are filled with rich Indian spices having their very own taste. Chef also highlighted about Dal Zaiqa & Dal Sutani.
For Desserts were Double ka meetha, Phirnee and Ananas ka Zarda.
Double ka meetha & Phirnee
Double ka meetha (Shahi Tukda) was unlike what it usually is, distinct, soft and just right on sweet. Phirnee was very delicious and made to perfection
Ananas ka Zarda
This is sweet rice made with finely chopped pineapple. The rich flavours of Ghee and cinnamon along with Pineapple makes it one of the most divine dessert.
One can relish Bhopali Chai & Paan just after their meal.
